The first time I was introduced to Michael Symon it was on the The Chew. Honestly, I tuned in to watch Mario Batali, because I've been a huge fan of his ever since Spain...On The Road Again. But anyway, back to Michael... now I'm a huge fan of his so I had to watch his new show, Symon's Suppers. On the first episode he made brunch with his wife Lizzie. He's a huge fan of her homemade granola and since it looked easy enough to make I decided to make it with my son Sunday. Results? It was super easy to make and mighty scrumptious!
Lizzie Granola
4 cups rolled quick oats
2 cups unsweetened coconut
2 cups almonds
1 cup cashews ( I substituted walnuts)
3/4 cup olive oil (next time I'm going to use coconut oil instead)
1/2 cup honey (I substituted agave)
2 tsp cinnamon (next time I'll add more)
1 tsp kosher salt
Toss all of the ingredients together and bake 325 for 30 minutes or until golden. Let granola cool and add dried fruit if desired.

I ate mine over some SO Delicious Coconut Yogurt, added some dried berries, and drizzled a teansy bit of agave over the top. Sooooo good! My husband is a huge fan of it and has already requested that we make a batch every week.
